Summertime is strawberry time. The season will soon begin, and those delicious red berries (which are actually nuts!) are just waiting to be transformed into delicious dishes. This recipe will give you a light, yet hearty alternative to the typically sweet strawberry dishes.
Wash the strawberries and cut into quarters and place in a bowl
Add sugar and lemon juice to bowl and mix well
Chop the lettuce, basil and rocket into bite-sized pieces and place in a separate bowl
Add the marinated strawberries and mix with the greens
For the dressing:
Mix together vinegar, sunflower oil and honey
Season with salt and pepper and pour over the salad
Slice the Parmesan cheese and sprinkle cheese and pine nuts over the salad.
