Pancakes
  1. Mix the eggs, milk and flour with a whisk.
  2. Add the spinach and ricotta.
  3. Add the baking powder and baking soda.
  4. Add salt and pepper to taste.
  5. Heat a little cooking oil in a pan over high heat until it simmers, then reduce to medium-low heat.
  6. Place a scoop of the mixture in the centre of the pan.
  7. Flip over after approximately 2 minutes when the pancake peels off easily.
  8. Cook for another 2 minutes.
  9. Remove the pancake from the pan and repeat 5 more times.
Topping
  1. Cut radishes into thin slices.
  2. Trim the basil.
  3. Arrange the pancakes on top of each other (2 x 3 pancakes).
  4. Spread the tops of the last pancakes with cream cheese.
  5. Place the salmon on top.
  6. Cover with rocket, radish and basil.
  7. Sprinkle with sesame seeds.
  8. Enjoy!
