It’s asparagus time and these popular vegetables are finding their way back to the local plates. This oven baked asparagus recipe is a perfect choice if you’re looking for something quick and easy.
Prepare the asparagus and cut off the hard ends.
Grease a rimmed baking tray with some butter.
Place the asparagus and cherry tomatoes on the baking tray.
Spread the rest of the butter in flakes over the vegetables.
Cut the mozzarella into small pieces and spread them on the baking tray too.
Season the mixture sufficiently with salt, pepper and paprika.
Pour the white wine and the vegetable stock over it and place the baking tray into the preheated oven.
Now bake everything together for approximately 25 minutes — turning the asparagus 1-2 times with a fork during the baking process.
