- 125 g flour
- 20 g shredded coconut
- 2 bananas
- 50 ml milk
- 50 ml oil
- 60 g maple syrup
- 5 stalks of rhubarb
- 50 g frozen berries
- Preheat oven to 180°C.
- Mix all dry ingredients (flour, coconut).
- Mash the bananas, add milk, oil and syrup.
- Mix dry and wet ingredients in a bowl.
- Wash and peel rhubarb and cut into small pieces and stir into the dough.
- Put dough into muffin cups and bake for 15-20 minutes (until slightly brown on top).
