Quick Red Lentil Dal

Did you know that the red lentil is actually brown? The strong orange-red colour only appears after peeling. That’s why it can be enjoyed after only 10 minutes of cooking and is easily digested. Today we are cooking a delicious dal with red lentils.

Instructions
  1. Wash the ginger thoroughly and (if you like) chop it with the peel. Also chop the garlic or squeeze it.
  2. Fry in a pan with the peanut oil for about 1 minute.
  3. Now wash and drain the lentils and add them to the pan with the curry and cumin. Sauté briefly.
  4. Then add the stock and tomatoes, mix briefly and cook over a medium heat for 10-12 minutes until the liquid is absorbed and the lentils are soft.
  5. Season with lemon juice, salt and pepper. Serve immediately with chopped coriander and a little crème fraîche.

Moules Frites – Mussels Belgian style

Mussels contain many vitamins: from B1, B2, B6, C and E to zinc, iron, omega-3 fatty acids and a few more! The shellfish consist of 80 per cent water and contain about 69 calories per 100 g. Today we are preparing them with fries – the Belgian way!

  1. Peel the potatoes and cut into even strips of chips. Bake in an oven preheated to 180° C for about 20 minutes.
  2. In the meantime, chop the onions, garlic and soup vegetables and roughly chop the parsley. Heat the oil in a large pot and sauté the vegetables briefly. Deglaze with a dash of white wine and simmer briefly.
  3. Add the mussels and the rest of the wine to the pot and cook, covered, for a few minutes until the mussels open. Season the finished mussels with fresh pepper.
  4. Remove the chips from the oven and salt, remove the mussels from the broth and sprinkle with parsley. Serve together. Mayonnaise goes well with this.

Kale is one of the most nutritious, healthy and versatile vegetables – just 100 grammes of kale cover the daily requirement of vitamin C and even three times the daily requirement of vitamin K. So go for it!

  1. For the dressing: mix all the ingredients together and blend to a creamy mixture.
  2. Simmer the lentils in twice the amount of water for approx. 20-25 minutes.
  3. Wash the kale thoroughly, remove the leaves from the stalk and chop. Place in a large bowl.
  4. Wash the apple and cut into small pieces. Sprinkle with a little lemon juice.
  5. Halve the avocado, pit it and cut into thin slices. Sprinkle with lemon juice and add to the kale in the bowl with the apple.
  6. Finally, mix in the cooked lentils and the dressing.
  7. Finely chop the tree nuts and sprinkle over the salad.

Truffle Fries

Truffles are not only a rarity, but also real powerballs! They contain vitamin C, B vitamins, potassium, calcium, magnesium and iron. They are also a good source of omega 3 fatty acids – not to mention that they are extremely delicious!

  1. Cut the potatoes into thin chips and place them in a bowl of cold water for at least 1 hour. Change the water several times during this time until it remains as clear as possible.
  2. Preheat the oven to 230 degrees (top and bottom heat). Drain the fries and dry well. Return to the (dry) bowl. Add the olive oil and truffle oil and mix well.
  3. Sieve the cornflour over the top, add the Parmesan and mix well again.
  4. Place the chips on two baking trays. Next to each other, not on top of each other, otherwise they won't get crispy!
  5. Bake in the preheated oven for approx. 20 - 25 minutes until crispy. Sprinkle with salt and slice the fresh truffle over the fries.
  6. Our recommendation: enjoy immediately – preferably with a glass of champagne!

Caramelised grapes on goat’s cream cheese

Strictly speaking, seedless grapes do not exist! They do have seeds, but they are so tiny that you don’t even notice them when eating the delicious berries. By the way, “seedless” grape varieties have not been artificially created in a laboratory, but have come about through a random, natural mutation.

  1. Wash and halve the grapes.
  2. Melt the butter in a saucepan and then add the grapes and sugar. Allow to caramelise for 1-2 minutes.
  3. Spread the goat's cream cheese on the bread and place the grapes on top.
  4. Garnish with crema balsamico as required.

  2. Coarsely chop all ingredients and finely puree together in a blender.
  3. Depending on the consistency, use a little flour to thicken the sauce.
  4. Mojo Verde is a great sauce for potatoes or grilled delicacies!
